Well, I double-checked my pkg, and it says under ingredients egg whites 99%, then less than 1% of other stuff, including color, so maybe they color them yellow to make us think we're eating whole eggs, and subconsciously we'll think they taste good?
There is another product called All Whites. I haven't used them in awhile, but I remember the pkg said something about they don't whip up well, but they sell another egg white product that should be used for whipping. I could never find it in the store, and I can't remember the name of it.
Sorry if that wasn't much help. I just didn't want you to eat the Egg Beaters and have them cause you problems if you can't tolerate egg whites.
