My family's favorite muffin recipe. This recipe comes from Bob's Red Mill.
2 Egg whites 1/2 C. IBS safe milk 2 Tbls. sugar 2 Tbls. canola oil or applesauce 1 Cup white or brown rice flour 2 tsp. baking soda 1/2 tsp. salt 2 Tbls. chopped nuts, 1/4 cup raisins or chopped dates, 1/4 cup blueberries, or 2 Tbls. carob chips (optional).
Mix in all ingredients well. Bake in greased 6 cup muffin tin at 350 degree for 17 - 20 minutes.
I always make this with blueberries. Once I tried it with mushed bananas and that turned out well. Today I plan to try this with sliced strawberries. I can't eat the strawberries, but thought it will be a fun treat for my kids after school.
