I realize it's summer and you probably won't be baking a huge dinner like this for a few more months, but I came across it while looking for something to cook for tonight and had to post it. My hubby and I love it!
Roasted Chicken & Potatoes
1 Cup chopped celery 1 medium onion, chopped 1/2 Cup soy margarine 2 Tbsp poultry seasoning 1/2 tsp rubbed sage 8 Cups cubed day-old white bread 1/2 Cup chicken broth 1 roasting chicken (5-6 lbs) 1/2 tsp paprika 1/4 tsp salt pinch pepper 6 medium baking potatoes, peeled & quartered
In a skillet, saute celery & onion in margarine until tender, about 5 minutes. Add poultry seasoning & sage. Place bread crumbs in a large bowl. Stir in celery mixture & chicken broth; mix lightly. Just before baking, stuff the chicken. Place on a rack in a roasting pan; tie the drumsticks together. Combine paprika, salt and pepper; rub over chicken. Bake, uncovered, at 350 for 1 1/2 hours, basting every 30 minutes; cover and bake 1 1/2 hours longer or until potatoes are tender & a thermometer reads 180-185.
