There are other tortellinis stuffed with dead pig (ew) and animal fat (cheese); the only IBS-safe ones I could find were the chicken herb, and even they contain some percentage of chicken fat.

Yes, you can serve them cold; in fact, mine are cold when I put them in the salad greens. However, after boiling them, you need to add a dressing of some kind to keep them from sticking (it's pasta). A fat-free Italian salad dressing would work great, and you can doctor it up with some fresh basil (oooooh yummy!) and maybe even fresh garlic. A pesto sauce would be incredible!

Oh! And don't forget the soy parmesan to sprinkle on the top. Yummmmmmm......
