I've never made a recipe post before but I thought that it would be a good start with this one. When I got IBS I was so sad about giving up chocolate but then it dawned on me one day that this frosting that my mom always made and that was an absolute family favorite was something that I could change just a little and still enjoy. So I thought I'd share it with all of you in hopes that you can enjoy it as much as I do and everyone else I make it for still. This recipe can also be convieniently found on the back of any Hershey's Cocoa container.
1 stick (1/2 cup) soy butter (or whatever you use instead) (since the recipe calls for it melted, I imagine you could use canola oil if you wanted--and it always works for me if I use the butter that's out now made with canola oil) 2/3 cup Hershey's Cocoa 3 cups powdered sugar 1/3 cup soy or rice milk 1 tsp Vanilla Extract
Melt butter Stir in cocoa Alternately add powdered sugar and milk, beating on medium speed to spreading consistency. Add more milk if necessary. Stir in vanilla
This recipe is enough frosting to very generously frost a normal 2 layer cake.
