I wouldn't go NEAR aluminum if my life depended on it!
Sorry, but I believe the old story that it contributes to the development of Altzheimer's. My MIL loved her beer -- she drank TONS of it, all from aluminum cans -- and she died from Altzheimer's.
When I bake, I use stainless steel, glass, pottery or porcelain. I'll use aluminum only if it's coated with something else, and I never allow aluminum foil to touch my food. I'll cover my pan with the foil, but never cook on it.
Actually, the cookware I like the best is the old stuff called "Visions." It's glass -- and that's why I like it -- I can see how it's cooking without lifting the lid. And you can take it from the oven to the fridge -- and microwave in it! I love the stuff. You can find it at a lot of garage sales or flea markets, antique or junktique stores. Whenever I see one, I buy it up.
I don't even use baking powder (it contains aluminum!); I use Bakewell Cream instead.
