Herbed Turkey Burgers Serves 4
2 tbls. Olive oil 2 shallots, minced 1 pound ground turkey ¼ cup loosely packed fresh mint leaves, finely chopped ¼ cup loosely packed fresh parsley leaves, finely chopped 2 tsp. Dijon mustard, plus ore for serving 1 tsp. salt ¼ tsp ground pepper
Heat 1-tablespoon oil in medium sauté pan over medium heat. Add shallots; cook, stirring, until they are soft and translucent, about 2 minutes. Remove from heat, and set aside.
In a large bowl, mix together turkey, mint, parsley, and mustard. Season with the salt and pepper. Divide meat into four equal parts, and forming into patties.
Heat remaining tablespoon oil in a large sauté pan over medium heat. Add patties, and cook until underside is brown, about 3 1/2 minutes. Turn and continue cooking until other side is brown and center is no longer pink, about 4 minutes.
