The planning is half the fun! I'm not quite in the same boat, but kinda - I do have my own kitchen, but it's half the size of a small closet, with no counters and very little in the way of cabinets. It's VERY difficult to cook in here, so I often rely on whatever I can make in either the crockpot or the Foreman grill! But I do exactly what Bev suggested... printing off recipes like mad, so I'm ready to try all sorts of good things when I have the room to have ingredients on hand all the time. It's a lot easier than doing searches to find stuff when the cooking whim strikes!
ps - My recipe binder is a 1960s number (picked up at a thrift shop for $1) covered with this awful red fabric in a print of teapots and cooking utensils. But I love it!
