You can use boneless skinless chicken breast tenderloins or turkey breast cutlets for this recipe. You can adjust this very easily too make a lot or just a little.

Chicken or Turkey Breast Parmigana

Chicken or turkey breast cutlets (about a pound or more)
2 cups Bread crumbs
1 cup Newman's Own Lighten Up Balsamic Salad dressing
Garlic salt (to taste)
1/4 cup Soy Parmesan
Olive or Canola Oil spray

Marinate the chicken or turkey in about a cup of dressing for a few hours.

Mix bread crumbs, garlic salt, and Parmesan in a bowl

Coat the marinated chicken in the crumb mixture.

Spray a baking pan with the oil spray and then put the chicken on it and actually spray the top of the chicken with the oil spray (just enough so it will get kinda crispy)

Bake at 350 degrees for about 35 minutes until done.

Serve over angel hair pasta with a tomato sauce, bruschetta, or a bit of safe margerine.

Sprinkle with parmesan and serve with zucchini or other vegies that work for you.

A quick note about the bread crumbs - the only dairy free crumbs I have found are at a health food store called Panko bread crumbs these work okay. I do think it's better when I make the bread crumbs from scratch (but I think it's a pain) (French bread, tbsp safe margerine, crushed garlic, and salt - bake until kind of hard and put in a blender after cool)
