Banana Bread Question: Heather or Kree!

Heather or Kree

Nowadays I regularly use Heather's banana bread recipe (minus the sugar) to make pear bread, apple bread, apple/blueberry bread and (my next innovation) apple/strawberry bread! I just substitute the three cups of bananas for any fruit I desire! (I usually use pureed babyfood fruit such as pureed pears as the substitute.)

The problem is I get a lot of gas after eating this bread. I fear my old egg allergy is acting up. The six egg whites are just more than my body can bear!

What I want to know is.... Could I use less egg whites (for example, three or four only), and make up the difference with some extra baking powder and/or baking soda? If so, how much baking powder / baking soda would I need to use?

What value do all these eggs add to the recipe anyway? Are they needed to make the bread rise, or to make it moist? What would happen if I used just half the recommended egg whites?

Please don't suggest I use an egg substitute. I prefer to use real ingredients. I never trust substitute foods, and my IBS is so sensitive.
