My first time trying rhubarb and I loved it. I cut the recipe in 1/2 and used oatmeal like Heather suggested. I think it would be really good with some vanilla soy ice cream. I was going to try making Kree's Vanilla Soy Ice Cream, but didn't get the idea till after I pulled it out of the oven - and well, I was just too lazy by that point! lol Will try it later though.
