Crockpot Chicken Paprikash (Makes 4 servings)
I love my Crockpot... and this is one of the most flavorful Crockpot recipes I've tried!
Ingredients: 1 1/2 cups water 4-5 lbs boneless, skinless chicken breasts 1 cup canned tomatoes (I use diced) 1 green pepper, chopped (I only use about 1/2 a pepper) 1 small onion, sliced 2 Tablespoons paprika (I use about 1 1/2 Tbsp) 1 clove garlic, minced 1 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon oregano 1/4 cup all-purpose flour 1 cup plain soy yogurt
1. Put the water, chicken, tomatoes, green pepper, onion, paprika, garlic, salt, pepper and oregano into the crockpot. 2. Stir to blend. 3. Cover the pot and cook on low for 9 to 10 hours until chicken is tender. 4. Remove chicken from the crockpot and skim fat from the remaining sauce. 5. Remove 1/4 cup liquid from the crockpot and allow to cool a bit. 6. Blend flour with the 1/4 cup cooled juices and return the flour mixture to the liquid in the crockpot. 7. Mix well and stir until thickened. 8. Blend in soy yogurt. 9. Return chicken to the pot and allow to heat through, but do not boil. 10. Serve on cooked noodles if desired. The sauce is also great on mashed potatoes!
