I have some occasional late nights during the week like that, too. To cover that (and sometimes a quick lunch, too), I make a pot of homemade soup at the beginning of the week. If I feel like I need more than just a bowl of soup to make the hungries go away, I make a sandwich or have a rice cake with almond butter (can't do peanuts!). Hope this helps. I know how you feel.
