Tunaburgers

For dinner we had...

Tunaburgers

1 medium carrot, coarsely grated
1 small onion, very finely chopped (I used 1 tablespoon onion powder b/c the onion I intended to use had gone, ugh, moldy!)
1 6 1/2-ounce (184 g) can tuna, drained and flaked
2 egg whites
2 tablespoons (30 mL) low-fat mayonnaise (I used low-fat Miracle Whip)
1 1/2 cups (375 mL) fresh bread crumbs
1 teaspoon (5 mL) vegetable oil
Salt and pepper

In a medium bowl, mix all the ingredients together, seasoning the mixture with salt and pepper to taste. If you have a food processor, now is the time to use it. The tuna mixture should be very well mushed together or else the burgers will fall apart when you cook them. If you don't have a processor, use a fork and mash like crazy.

By hand, form the mixture into patties.

Place tunaburgers on a preheated barbecue grill, and cook over fairly high heat for about 10 minutes per side, until golden brown. Serve in a bun, with some sliced tomato, mayonnaise, and lettuce (if you can handle these things).

If you prefer to pan-fry the tunaburgers, heat a little vegetable oil in a large skillet (or spray the skillet with nonstick cooking spray), and cook the patties, 10 minutes per side, until golden.

Makes 3 to 4 servings. (We made 3 large patties; I ate one and my boyfriend ate two. He made his into sandwiches with ketchup, while I ate mine with a smidgen of tartar sauce.)
