I am from the south and I grew up on catfish, so I have some ideas!

My favorite way to eat it that is IBS friendly would be to make a coating for the fish and then bake it in the oven.

There are 3 main steps:
1.) Make a coating: Mix flour, bread or cracker crumbs, and some cajun seasoning. Quantities don't really matter, just include about equal amounts of flour and crumbs.

2.) Liquid to have the coating stick: Take about 3/4cup of soy milk and one egg, and lightly whisk it with a fork.

3.) Dredge the fish in the milk mixture, and then into the flour mixture.

4.) Bake in the oven at 350 until they are white all the way thru, usually takes about 12 min.

If you have a butter type spread, you can melt that and drizzle it over the fillets.
