uncheese cookbook

I did a search on The Uncheese Cookbook and found some dialogue about it, but could not find the answer to this question - I noticed that most of the cheese recipes call for fairly large amounts of nuts (usually about 1/2 cup). Many of the recipes call for cashews. I thought nuts were something that IBSers are supposed to avoid. Cashews can be a trigger for me. Does it make a huge difference that they are to be ground up? Does this make them more digestible? I was really looking forward to making some uncheese until I saw the ingredients. Has anyone tried to make/eat these recipes?
