Pumpkin Spinach Risotto

serves 4
3c pumpkin, peeled and chopped 2t olive oil salt and pepper to taste 1 medium onion, chopped 2 cloves garlic, crushed 2 cups arborio rice 6c veg stock 1c white wine small bunch spinach leaves, chopped fresh basil to garnish
combine pumpkin, half oil s and p in large baking dish, mix well
roast in hot oven (390) for 30mins or until pumpkin is tender and lightly brown
meanwhile heat remaining oil in large pan, add onion and garlic stirring until onion is soft
add rice, veg stock and wine
simmer covered for 15 mins stirring once
remove from heat and stir in spinach
let stand 10 mins (spinach will wilt)
gently stir in pumpkin, serve and garnish with fresh herbs
