Leigh, you're completely right, this recipe is probably above the 25% fat limit. Unless you use something like fat free Soya Kaas, which I think tastes disgusting, there's probably no way you can make mac and cheese that's totally safe fat-wise. Personally, this doesn't bother me at all because it has so much soluble fiber built into it (the pasta). If you're worried about the fat you could always omit the margarine and the soy parm (it's still great without them). You could also try using less soy cheddar and adding some garlic or onion powder or dry mustard to give it flavor.
