Bev, I'm probably a horrible person for doing this, but I had to post this for you. I know you're avoiding sugar, but these just made me think of you! Everyone has to cheat sometimes...
Mocha Chocolate Chip Muffins (Makes 14 muffins)
I haven't tried these yet, but they look fabulous!
1/4 cup soy milk 1 teaspoon canola oil 1 cup unsweetened applesauce 1/4 cup egg substitute 1 Tablespoon instant coffee dissolved in 1 Tablespoon water 1/4 cup unsweetened cocoa powder 1 1/2 cups flour 3/4 cup sugar 2 teaspoons baking powder 1 teaspoon cinnamon 1/4 cup semisweet chocolate chips (can omit but it's still low fat with them!)
1. Heat oven to 400 F. 2. Spray 14 muffin cups with cooking spray. 3. In medium bowl combine soy milk, oil, applesauce, egg and coffee mixture. 4. Combine remaining ingredients in a large bowl. 5. Add the wet ingredients to dry mixture and mix until combined. 6. Fill muffin tins 1/2-3/4 full. 7. Bake 30-40 minutes, until toothpick inserted into center comes out clean.
