Shannon - Here's a WW recipe from their Annual Recipes for Success 2003 that I revised for my IBS. We had it the other night and even hubby liked it.
Cheesy Vegetable Chowder
2 slices bacon or 50% less fat (Gwaltney) 1/2 cup chopped onion 1/2 cup chopped green pepper (optional) 2-1/2 cups refrigerated/frozen diced potatoes with onion (like Potatoes O'Brien, or Simply Potatoes) 1 - 14-1/2 oz. can veg broth 1-1/2 cups low fat or FF soy, rice or almond milk, plain 1 - 15 oz. can cream corn (put in blender before and get everything pureed) 1 cup shredded soy reduced fat cheddar cheese 1 tbsp flour S&P Cook bacon in dutch oven until crisp. Drain bacon on paper towels and reserve drippings.
Add onion and pepper, saute until soft. Add potato and broth. bring to boil, cover, reduce heat and simmer 10 min or until potatoes are tender.
Stir in milk and corn; cook over med low for 5 min.
Combine cheese with flour, tossing to coat. Add to chowder, stirring until cheese milts. Top each serving with crumbled bacon. Makes 6-7 serv. (1 c = 1 serv)
Points made w/regular cheddar and 1% reg milk = 4/serv.
Once you know what you have to do with nuts, veggies, etc., WW recipes should be safe. We all have different triggers, so stay away from the recipes that "get" you.
