They're really simple, if a bit slow and you can do all kinds of things. My recipe for mushroom risotto is on the Index and you could sub all kinds of things for the mushrooms. I like courgettes and peppers (chopped up real small they cook right down and so minimise insoluble fibre) or mushroom risotto with peas added near the end. Or you can add prawns, chicken.... Anything! Another idea is make some of Bevrs pesto and mix that with the cooked rice. I used to love real pesto and rice, but haven't tried it with the safe stuff.
