Hi Belinda, Shell's right about the vegan soy cheese. That's the kind I use and it doesn't contain any casein. I'm not so sure about subbing that dressing, though. That recipe has a lot of olive oil in it, so using a cup of it on the chicken would make it awfully high in fat. Here's one I found online that's fat free. It also uses mustard, but you can try it without that and see how it tastes!
No-Fat Italian Dressing
1/4 cup lemon juice 1/4 cup cider vinegar 1/4 cup unsweetened apple juice 1/2 tsp oregano 1/2 tsp dry mustard 1/2 tsp onion powder 1/2 tsp basil 1/8 tsp thyme 1/8 tsp rosemary 1 cl garlic, sliced
Combine all ingredients. Chill for at least an hour or two to allow herbs to blend. Remove garlic clove pieces before serving.
