Orange Custard with Berry Sauce - Delicious and Safe!

While searching through my cookbooks for a safe custard recipe, I found this wonderful dish in Jane Fonda's Cooking for Healthy Living:

Orange Custard with Berry Sauce:

1 2/2 cups soy milk (vanilla)
1/4 cup plus 2 tbs. sugar
2 tsp orange zest (I used more)
1 tsp lemon zest (I used more)
1 tsp vanilla (I used organic)
1/4 tsp salt (sea salt)
4 egg yolks (for those who can tolerate, I used organic)can also substitute egg whites

Preheat oven to 325 F

In a medium bowl, combine the milk, sugar, orange and lemon zest,vanilla,salt and egg yolks, whisk until well blended.

Divide among four 3/4 cup custard cups (I used my china cups,did not have enough custard cups)

Place the cups in a shallow baking dish and add enough hot water to reach 1 inch up the sides of the cups.
Bake until a knife inserted comes out clean: 1 hour and 10 mins. Cool completely before serving. (I could not wait)


I took strawberries (7) put them in a heavy pot in which I added 1/4 cup sugar and stirred until sugar melted and berries were crushed. You can use any berry you prefer. Spoon over custard, enjoy. This is delicious. The remaining sauce can be used over pancakes, french toast, etc.
