Also how long after it was cooled down did you wait to tightly cover it up? Those are my two thoughts. I have made this before, the first time it turned out great. The second time it was dry. I waited to long after it cooled before I covered it. I'm going to make the Lemon bread today in her eating for cookbook. I love this one! My 6 year old boy also LOVES it!!
