2 Tbsp non hydronated margarine (or use your safe one) 2 tsp canola oil 3 meduim carrots thinly sliced 3 celery ribs thinly sliced 1 cup broccoli florets 2 cups cauliflower florets 1 cup thinly sliced zucchini 3/4 cup cooked chicken breast cubed 1 small onion chopped 1/2 cup cooked rice white 1/2 cup shredded soy cheddar cheese ( this recipe you can omit and add those veggies that are right for you)
In a large skillet melt margarine over medium heat. Add the oil and all veggies and chicken.Cover and cook for 15-20 minutes or until veggies are crisp-tender, stirring occasionally. Stir in rice and cook until heated through. Display in a small casserole dish or a pan to fit. Sprinkle with cheese, cover for 2 minutes or until cheese is melted. Serves 4. It's a great meal with everything you need in one dish. Serve with a nice dinner roll or your favorite bread, Nice glass of lemonade. Enjoy!!!
