This is not only an excellent recipe, but it's also a good way to safely get your veggies. Note: See serving suggestion below.
TURKEY VEGETABLE LOAVES
2 lb. ground turkey (as lean as you can buy it)
1-1/2 cups bread crumbs
1/2 cup Egg Beaters
1 medium onion, finely chopped
1 green bell pepper, diced
1-1/2 cups chopped celery
One 16-ounce can diced tomatoes, drained
1/2 cup minced fresh parsley
3/4 cup ketchup
1 tablespoon Worcerstershire sauce
1 teaspoon poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper
Preheat oven to 375 degrees. Spray two loaf pans with Pam. Combine all ingredients; shape into 2 loaves in prepared pans and bake for 1 hr.
6 tablespoons brown sugar
1/2 cup catsup
1/2 teaspoon nutmeg
2 teaspoons dry mustard
Combine all ingredients. Remove meatloaves from oven and pour off any liquid. Spread Piquant Sauce over loaves and bake an additional 15 minutes.
Allow meatloaves to "set" for 10 minutes before serving.
Serving suggestion: I cut up some red "new" potatoes, sprinkled them with a little olive oil, salt and pepper and popped them in the oven with the meat loaf for the last half hour. They were a perfect accompaniment to the meat loaf.
