Grilled Turkey Burgers (Makes 4 servings)
This is my favorite burger because the cheese is baked right inside!
1 1/2 lbs ground turkey 1/2 cup swiss soy cheese slices, chopped into tiny squares 3 scallions, thinly sliced 1/4 cup dried breadcrumbs (may need to add more--make sure they're dairy-free) 1/4 cup Dijon mustard 2 cloves garlic, minced salt and pepper, to season olive oil, to oil grill (optional) 1. Preheat your grill to Medium heat. 2. In a bowl, combine the turkey and soy cheese with a fork. 3. Add the scallions, breadcrumbs, garlic, and mustard. 4. Season with salt and pepper. 5. Gently form turkey mixture into four patties, approximately 1 inch thick. 6. If you have trouble forming patties, you may need to add more breadcrumbs; it really depends on the amount of moisture that your meat contains. 7. Lightly oil grill with a little bit of olive oil (if you desire). 8. Grill patties until they are cooked through and a meat thermometer reads at least 160 degrees. 9. Serve burgers on buns (you can grill the buns if desired) with tomato, lettuce, pickles, or any other condiments of your choice!
