They want you to separate the yolks from the whites so you can use either later in the recipe. Without seeing the recipe, I would say you're good to go with Egg Beaters for either the yolk or the white part. 1/4 cup of the stuff equals one egg, so if you separate one egg, I'd use 1/8 cup (or 2T) for either the white or the yolk -- and ditto for the other part of the egg later in the recipe.
