Yeah, ground WHITE meat turkey, the leanest you can buy; Heather even recommends asking the butcher for help, just to make sure you don't end up with ground dark meat and/or parts. Ew. I've tried both in my spinach turkey loaf, and I can always tell when they've thrown in some dark or fatty turkey meat because it always comes out much more moist.
