Was going to make the Gingerbread Muffins when I realized that I don't have any soy margarine.
Is Smart Balance OK to use? Smart Balance is a butery spread that is supposed to help cholesterol. I couldn't find any dairy in it.
Ingredients are: natural oil blend (palm, fruit, soybean, canola seed and olive oils), water, contains less than 2% salt, whey, vegetable monoglycerides and sorbitan ester of fatty acids (emulsifiers), soybean lechitin, potassium sorbate, lactic acid (to protect freshness), natural and artificial flavor, vitamin E, calcium disodium EDTA, vitamin Apalmitate, beta-carotene color.
The nearest Whole Food (health food store) is half an hour a way, so it would be great if I could use Smart Balance instead.
