This isn't much of a recipe, but it's something I whipped up tonight and wanted to share. There are endless variations! I'm not sure how many servings it makes. 4-6 maybe?
8 oz. ziti pasta (sometimes I use brown rice pasta for a change) spaghetti sauce (I use Ragu Light--I have no clue how much!) soy mozzarella cheese (probably about 1/2 cup) soy parmesan
1. Cook ziti according to package directions and drain. 2. Pour drained ziti into a casserole dish that has been lightly sprayed with non-stick cooking spray. 3. Add enough sauce to make the pasta nice and moist, mixing it around to make sure it's all covered. (It's better to be too liberal with the sauce than not to have enough) 4. Mix in one or two big handfuls of soy mozzarella. 5. Sprinkle with a little bit of soy parmesan and a little more soy mozzarella. 6. Bake uncovered at 350 degrees for 20-30 minutes or until the cheese is melted and the top is lightly browned. 7. Enjoy!
VARIATIONS: *Throw in some soy pepperoni *Saute some zucchini until lightly browned and throw that in too *Try adding any cooked veggies of your choice! *I'm sure there are other additions I haven't thought of!
