Here's another good one, Shell. Once again, it hasn't been tried exactly as is, so you'd be a guinea pig! I'm sure you could use other veggies in this one too.
Impossibly Easy Chicken 'n Broccoli Pie (Makes 1 9-inch pie)
1 (10 oz) package frozen chopped broccoli, thawed and drained (or 2 cups fresh broccoli florets) 1 1/2 cups shredded cheddar soy cheese (6 ounces) 1 cup cut-up cooked chicken 1 medium onion, chopped (1/2 cup) 1/2 cup reduced fat Bisquick baking mix 1 cup soy milk 1/2 teaspoon salt 1/4 teaspoon pepper 4 egg whites or 1/2 cup Egg Beaters
1. Heat oven to 400ºF. 2. Lightly spray a 9-inch pie plate with non-stick cooking spray. 3. Sprinkle broccoli, 1 cup of the soy cheese, the chicken and onion in pie plate. 4. Stir Bisquick mix, soy milk, salt, pepper and egg whites until blended. 5. Pour into pie plate. 6. Bake 30 to 35 minutes or until knife inserted in center comes out clean. 7. Sprinkle with remaining soy cheese. 8. Bake 1 to 2 minutes longer or just until cheese is melted. 9. Cool 5 minutes.
