Shell, how would this work? I have a warning... I haven't tried it since starting this diet, so the substitutions I made here are untried. I made it with whole eggs and full fat Bisquick. But I don't see why it wouldn't work this way!
Impossibly Easy Quiche (Makes 1 quiche)
1/2 lb veggies (sliced mushrooms, chopped broccoli, etc.--can mix and match) 2 cups soy milk 1 cup shredded soy cheese (swiss or cheddar) 8 egg whites or 1 cup Egg Beaters 1/3 cup finely chopped onions 1/2 cup reduced fat Bisquick baking mix 1/4 teaspoon salt 1/8 teaspoon fresh ground pepper 1/2 teaspoon thyme (fresh is best)
1. Preheat oven to 350. 2. Lightly spray a 9-10 inch pie plate with non-stick cooking spray. 3. Sprinkle veggies, soy cheese, and onion evenly over bottom of pie plate. 4. Place remaining ingredients in blender, cover, and blend on high for 1 minute (or whisk by hand until mixed well). 5. Pour into pie plate. 6. Bake until golden brown and knife inserted in center comes out clean (50-55 minutes). 7. Let stand 5 minues before cutting. 8. Refrigerate leftovers.
