Fabulous Spanish Rice

Tired of plain white rice? Try adding a Spanish twist. This is one of the most simple recipes to prepare and has a great flavor. I grew up eating alot of Mexican/Southwestern food, and I miss alot of the dishes...So when I tried this for the first time I was in utter bliss. This compares to some of the best Mexican restaurants that I've been to. I've doubled the recipe for a large crowd, and it turned out awesome!

Spanish Rice

1 1/2 cups uncooked white rice
2 cloves garlic (minced)
2 tablespoons vegetable oil
1 small onion (chopped)
4 ounces tomato sauce
2 1/2 cups chicken broth
1 teaspoon cumin

1. Brown rice in oil using a 4 quart sauce pan (rice should turn a nice toasted color-- add slightly more oil if it starts to burn). Add chopped onion, minced garlic and cumin.
2. Add tomato sauce and chicken broth. Bring to a boil-- reduce heat to low-- cover and cook for 15 mins.
