3 cups cooked rice 1 cup minced fresh parsley 1/2 cup soy cheese cheddar divided. 1/3 cup chopped onion 1/4 cup chopped bell peppers 1 minced garlic clove 2 eggs ( use egg beaters) lightly beaten 1 can evaporated milk (check recipe board for this sub) 1/4 cup canola oil 3 tbsp lemon juice 1 tbsp lemon peel grated 1 tsp salt 1/2 tsp season salt 1/2 tsp pepper You can reduce the salt to what you want.
In a bowl combine rice, parsley, 1/3 cup cheese, onion, green pepper, and garlic. In another bowl combine the eggs. milk, oil, lemon juice and peel, salts, and pepper. mix well. Stir into the rice mixture. transfer to a sprayed 2QT. casserole baking dish. Sprinkle remaining cheese on top. Bake uncovered for 40-45 minutes at 350 degrees or until golden brown. Serves 6- 8. You'll be a big hit at the party. Also a fun dish for the kids!!
