In skillet over medium heat, cook 2 cloves garlic, peeled and sliced, in 1 Tbs. olive oil 5 min. Add 1 carrot, sliced; cook 5 min. more. Increase heat. Add 2 zucchini and/or yellow squash, halved lenghtwise and sliced, and 1 tsp. salt; cook 8 min. more, or until tender. Remove from heat; stir in 2 Tbs. chopped cilantro and 1 tsp. grated lime zest.
