3c. cooked chicken 3 cloves garlic, minced 1/3c. onion, finely chopped 2 chicken bouillon 1/2 tea. camino Tony Chachares [cajun seasoning] 2 Roma tomatoes...finely chopped 1/2 c. water 12 Flour tortillas cheese
Boil chicken for an hr. or until it falls apart really easy. In a skillet brown the chicken with a tad bit of olive oil. Add onion, garlic, and tomatoes. Stir for 1 to 2min. Add bouillon, spices, water and simmer until water is evaporated and the chicken is moist. Brown a tortilla in a skillet; add chicken mixture and a lil bit of cheese; Fold tortilla in half and the cheese should seal the tortilla closed.
I make if for my husband with lots of cheese and a mixture of sour cream and salsa to dip the quesadilla in. For me I just brown the tortilla and add the chicken with a lil salsa. I haven't quite found Soy cheese so I don't even use cheese.
Is this recipe okay...I had it last night and it didn't seem to bother me.
