I found this recipe in a PCOS Diet book and it was IBS safe just the way it was. It's delicious too!
spray oil or no more than 1t olive oil 1 large onion, chopped 2 cloves crushed garlic 1/2t cinnamon 1/2t nutmeg 1/2t chilli 1/2t tumeric 1/2t cumin boneless/skinless chicken breast cut in small chunks (1 per person - I actually use two brests for 3 people) 2 1/2 cups fat free chicken or veg stock 2 handfuls of chopped died apricots 2 carrots, sliced on the diagonal 3T tomato puree sprig of rosemary salt and pepper
1. Gently heat oil and add onion and garlic. Cook until softened. 2. Add cinnamon, nutmeg, chilli, tumeric and cumin. Mix well. 3. Add chicken and cook quickly to brown all pieces. (Add a little of the stock if needed to lubricate pan) 4. Add apricots and carrots and cook for about 5 minutes until carrots soften. 5. Add tomaoto puree, rosemary, s and p and finally the stock. 6. Bring to the boil and stir well. 7. Reduce heat and simmer for around 20 minutes. 8. Serve with rice. ( I like it with brown rice)
