Minestrone Meatball Soup

I made this recipe yesterday, it is one of my son's favorite soups.
1 c. chopped onions 1 c. chopped celery 2 cloves garlic 3 (14 1/2 oz) cans chicken broth 1 28 oz. can tomatoes, undrained and chopped 1 6 0z. can tomato paste 1 c. carrots, chopped 1 c. chopped potatoes 1/4 c. parsley 1 tsp. dried basil 1 tsp. dried thyme 1/2 c. uncooked macaroni 1 can kidney beans
spray dutch oven with pam. heat over med heat. add onions, celery, & garlic. cook til tender. stir in remaining ingredients, except macaroni and meatballs. bring to a boil, reduce heat. cover and simmer for 30 minutes. stir in macaroni and meatballs. simmer uncovered 10 to 15 min. more.
Meatballs
1# ground turkey breast 1/4 c oatmeal 1/4 c grated parmesan cheese (soy) 1/4 tsp dried italian seasoning 1/4 tsp garlic powder 2 egg whites
Mix well, and form balls. fry in a large non stick skillet, til nicely browned.
I top it with parmesan cheese and eat it with french bread. It is a hardy soup, perfect for this time of year.
