Okay, I misunderstood you -- I thought we were talking about bread machines. "Dense and heavy and hardens quickly" sounds to me like the temperature in your oven is too high. I found most of my problems with baking bread is the yeast. If it's not ABSOLUTELY fresh, you're gonna have problems with it. Do you keep it in the fridge? Also, rising problems usually occur if there's a draft or the temperature is too low for it to rise. If you're getting a hard crust in the RISING, then it's too hot. The best thing for rising bread dough is a gas oven. Put the dough in a bowl with a dishtowel over the top, and place in the oven -- don't turn the oven on -- the temperature from the pilot is PERFECT, and there's no drafts in the oven. You'll have a nice rise. Better yet -- get yourself a bread maker.
