Sugar-Free Organic Oatmeal Cookies ... and surprise chicken recipe

2 cups organic quick oats (pure with no additives ... best brand in Canada is One Degree available at Wholefoods and health food stores)

3 organic bananas ... the riper the sweeter (mash 'em up)

dash of organic cinnamon

2 organic egg whites (omit if you are allergic to eggs)

1/4 cup almond milk (Almond Breeze unsweetened original)

1/3 cup apple-cinnamon sauce (best brand is Eden)

***If you are STABLE, you can try adding one or more of the following:

3 chopped organic apples (red delicious or Fuji) ... remove peel and core

handful of organic blueberries

handful of chopped organic strawberries

Thoroughly mix everything up. Let stand for 5 minutes to enable the oatmeal to absorb the moisture.

Grease a cookie sheet (use organic olive oil ... President's Choice is best brand if in Canada)

Spoon the mixture in generous cookie-size portions onto the cookie sheet

Pre-heat oven to 350 degrees Fahrenheit

Bake 35 to 40 minutes until underside is a little golden brown.

Once cooled, store in sealed container in the fridge.

When you want a cookie, reheat it for about 20 to 25 seconds in microwave for best result.

This is a lovely IBS-safe treat even if you're not on a sugar-free diet. It's easy to make. If I can make it, anyone can. :-)

What to do with the leftover apple sauce?

Place organic or antibiotic-free or kosher (halal may work too) chicken legs in baking dish

Add some water

Spoon apple sauce onto chicken

Sprinkle with organic garlic powder if stable

Sprinkle with some fresh chopped parsley over top

Bake uncovered in pre-heated 375 degree Fahrenheit oven for about 2 1/2 hours or until done

Baste from time to time and make sure water doesn't run dry

Serve with organic mashed potatoes made with almond milk and a little salt.

Also serve with safe veggies: boiled organic carrots and organic beets that are peeled and chopped.
