Chocolate Marshmellow Cupcakes
I made these the other day and they were so good, almost like a ding dong! You dont need any frosting for these but I did put a 7 minute frosting on them. There pretty good on there own as well. I found this recips on the web and made it ibs safe. Enjoy!


1 cups flour

cup cocoa powder

teaspoon soda

teaspoon salt

1 cup sugar

1/3 cup vegetable oil

2 egg whites

1 teaspoon vanilla

cup almond, soy or rice

1/4 cup semisweet chocolate chips (opt) make sure there safe)

(12 large marshmallows)

Combine dry ingredients. Beat together sugar, oil, egg and vanilla. Whisk in dry ingredients and buttermilk, alternating, begining and ending with the dry ingredients. Beat until smooth. Stir in chocolate chips (If using) Scoop into prepared muffin pan. Bake at 350 for 20-25 minutes or until tops of cupcakes spring back lightly when touched. Let cool in pan on rack for 10 minutes; remove and cool completely on rack.

*For Chocolate Surprise, after cooling 5 minutes spoon or scoop small indent in center of cake and insert large marshmallow be sure you push all the way in.
