It's okay. Kind of couscous like and very healthy. Some people hate gritty textures like that. I didn't like it for breakfast personally. I recommend always cooking the healthy but not so tasty foods in vegetable stock. Or there is a recipe in Vegetarian Times to cook it with beet or carrot juice to make it a pretty color. Interestingly beets, spinach, and quinoa are all in the same plant family.
