I made something safe last night that turned out very well. Creamy and rich but low in fat. Hub said it seemed much fattier than it was.
I boiled a small shape pasta like penne. Meanwhile I saute a sliced red onion, then added sliced spinach-garlic chicken sausage (it is available all over. I used the Target Archer's Farms one. Natural Foods has a good one too. They are like turkey sausage but leaner and nicely flavored). I let the chicken sausage saute a few minutes, along with some optional minced garlic. Then I added chopped veggies and about 1 c broth. I used asparagus and yellow peppers. When they were crisp-tender, I added about 3/4 container onion soy cream cheese and stirred till creamy. At the end I added a container of halved cherry tomatoes and lots of salt and pepper. It can be topped with parmesan for non-IBSers. Mix the pasta into the pan and toss.
You can try other veggies like mushrooms, peas, green beans, spinach. The chive/onion soy cream cheese is essential to such an easy, creamy dish.
