Broccoli and Potato Frittata

This is so simple and easy to throw together for breakfast or dinner. Use whatever veggies you have on hand. Throw some soy parmesan on top before broiling. Enjoy!

Broccoli and Potato Frittata

1 large russet potato, peeled and cubed
1/2 cup coarsely chopped broccoli florets
1 tsp olive oil
1/4 teaspoon dried onion powder
1/2 teaspoon dried oregano
1 teaspoon fresh basil, finely chopped
1/2 teaspoon dried thyme
3/4 teaspoon salt
1/4 teaspoon black pepper
4 egg whites (3/4 cup)
1/4 cup rice milk

1. Bring water to boil in medium saucepan. Add potatoes; cook 7 minutes or just until tender. Add broccoli; cook 1 minute longer. Drain well. Set aside.

2. Mix oregano, basil, thyme, onion powder, salt, and pepper in medium bowl. Add eggs and milk; beat with wire whisk until well blended.

3. Heat oil in large ovenproof nonstick skillet on medium heat. Stir in potatoes and broccoli. Reduce heat to medium-low.

4. Pour egg mixture into skillet. Cook without stirring 5 minutes or until eggs are just set on bottom.

5. Broil 5 minutes until eggs are set.
