Super Simple and Safe Chicken Fricassee

This is the ultimate, safe comfort food!

Chicken Fricassee
Makes 4 servings

2 boneless skinless chicken breasts
3 cups chicken stock
1 tsp dried thyme
1/2 tsp sage
1 bay leaf
2-3 tablespoons cornstarch

Spray a deep skillet with non stick cooking spray. Season the chicken breasts with salt, black pepper, thyme, and sage. Brown both sides of each breast in the skillet over medium heat. Deglaze skillet with chicken stock, scraping the browned bits from the bottom of the pan. Bring stock to a boil, then turn heat down to a simmer. Add the bay leaf to the stock. Simmer chicken for 45-60 minutes. Remove chicken from stock, keep warm. Turn stock up to high and bring to boil. Mix cornstarch with 1/4 cup cool water until dissolved. Gradually whisk into boiling stock. Continue to let boil until it reduces and thickens into a gravy.

Serve sliced chicken and gravy over white rice, and with a side of peas.
