Hi there,
No, you should be just fine. Just don't swamp your food in the gravy if you end up using more fat in the recipe. The general guideline for IBS is to minimize your fat intake to 25% of your diet. 1 gram of fat contains only 9 calories. In general, if you stick to the diet for IBS, you shouldn't have to calorie count. You should be just fine with that recipe! I would make sure there are no other IBS triggers in the gravy such as High Fructose Corn Syrup, Casein, any other artificial sweeteners, or hydrogenated oils.
