1 cup fresh or frozen blueberies 1 tablespoon plus 1 3/4 cups flour, divided 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 1 tsp ground nutmeg 3/4 tsp salt 1 egg ( 1/4 cup egg beaters) 1 cup sour cream (use substitute) 1/3 cup milk ( soy or rice lite)
Pre heat oven to 400 use lite spray for twelve cup muffin pan
In a small bowl toss bluberries with 1 tablespoon flour. Set a side. In a large bowl combine 1 3/4 cup flour,sugar, baking powder,baking soda,nutmeg and salt, set aside. Ina meduim bowl beat egg and stir in sour cream sub. and milk. Stir in flour mixture until just combined (batter will be lumpy) Stir in reserved blueberries just until evenly distributed. Fill muffin cups 2/3 full with batter. Bake until golden about 20 minutes. Enjoy!!!
