Rice Stuffed Acorn Squash

Hi guys! I've never posted in this forum before, but I found a great new recipe and wanted to share it with you all! I posted it in the IBS Diet until I realized that there was a Recipe Forum also! Hope you enjoy!

2 Acorn Squash (large)
1/3 cup water

Stuffing:
2 cups cooked Whole grain and wild rice
1 Cup chopped onions
1 cup chopped red pepper
1 cup chopped celery
2 cups sliced mushrooms
1 cup breadcrumbs
thyme
no salt seasoning blend (your choice)
1/3 cup soy milk
1/2 cup low sodium vegetable broth
Tummy fiber to up the SF

Cut the acorn squash lengthwise, remove seeds, and place cut side down in a non-stick baking pan. Add water and bake on 375 for 45 minutes or until tender.

In a medium non-stick skillet brown the breadcrumbs and thyme and set a side.

In the same skillet, put onions, celery, pepper, and mushrooms and cook for 8-10 min or until tender. Add the rice and veggie broth and cook for another 4 minutes. Remove from heat and add the soy milk and tummy fiber and stir in really well. (If you can find soy cheese, a little would be excellent in the stuffing, maybe about 3 tbsps)

Sprinkle the flesh of the Squash with the seasoning blend and some breadcrumbs. fill the squash with the stuffing, mounding it to use all stuffing. Sprinkle breadcrumbs on top. Place back in oven and cook for 10-15 minutes or until breadcrumbs are browned and heated through. Serve.



I ate it last night for supper and I'm having it again for lunch today at work. It is great because the squash has a sweet nutty flavor almost pumpkin-like and the stuffing is wonderful! Rice is the SF and I added some tummy fiber for extra fiber! Hope you enjoy.
