Yup, everything else on the broccoli is okay, because you're just going to puree it all anyway. And for the leek, you trim off the roots and use both the white & green parts. Just trim off the ends of any yucky leaves. Also, on the leek, make sure you clean it like it says in the recipe (which is SUPER easy) in the water, because when you pull it out, you will see all the sand in the bottom of the bowl that got rinsed off - you don't want gritty soup!
